INGREDIENTS

3 tablespoons butter

1 leek, thinly sliced

2 shallots, peeled and thinly sliced

3 yellow onions, peeled, halved and thinly sliced

1/4 cup dry sherry

6 cups rich chicken or vegetable broth or stock (see note)

3 cloves garlic, minced

Salt and freshly ground white pepper to taste

8 ramekins or soup bowls

4 ounces Petit Basque cheese, grated

4 ounces Gruyère cheese, grated

Chopped parsley, for garnish

1 package puff pastry dough, thawed

1 egg beaten with 1 tablespoon water (this is called an egg wash)
