3 apples (we used Pink Lady, but your favorite apple pie apple will work great)

6 Tbsp unsalted butter, room temperature

1/2 cup granulated sugar
•
1 tsp cinnamon
•
1/2 tsp freshly ground nutmeg

For the Batter:
•
3 large eggs
•
1/2 cup buttermilk
•
3/4 cup granulated sugar
•
3/4 cups all-purpose flour
•
1 cup yellow cornmeal
•
1 1/2 tsp baking powder
•
1/2 tsp salt
•
1 Tbsp brandy
