12 slices day old brioche or white bread, cut into cubes (crusts discarded)
2 cups half and half
3 eggs

1 tsp cinnamon
1 vanilla bean pod, split and scraped
2 gala apples, peeled, cored and cut into small pieces
1 cup caramel pieces
1 Tbl soft butter, unsalted
3/4 cup brown sugar
1 Tbl flour
3/4 cup half and half
2 Tbl butter, unsalted
1 Tbl vanilla extract
