Canning Salsa - Chunky Tomato Salsa

  • 8 lbs ripe tomatoes (about 16 medium)
  • 2 cups seeded/chopped fresh Anaheim or Polano Chili peppers (2 to 3 - to make
  • it hotter you can leave one of the peppers seeds in the recipe)
  • 1/3 cup seeded/chopped fresh jalapeno (2 large)
  • 2 cups chopped onions (2 large)
  • 1/2 cup lime juice
  • 1/2 cup white vinegar
  • 1/3 cup tomato paste (make sure it's just tomatoes)
  • 5 cloves garlic, minced
  • 1 t. cumin seeds, toasted and crushed (or 1/2 t. ground cumin)
  • 1 t. salt
  • 1 t. ground black pepper
  • 3 cups yellow, green or red cherry or grape tomatoes halved
  • 3/4 cup torn fresh cilantro (this can be omitted if you don't like cilantro)
