INGREDIENTS

1 Tablespoon butter, ghee, or olive oil (use olive oil for dairy-free)

1 (12oz) package kielbasa sausage, sliced

2 bell peppers, diced (I like using 2 different colors)
•
3 green onions, sliced
•
1 clove garlic, minced
•
1-2 cups spinach, roughly torn or chopped
•
4 Tablespoons tomato paste
•
1 cup chicken broth or vegetable broth
•
1/2-1 teaspoon Cajun seasoning (I usually use about 3/4 tsp.)
•
1/4 teaspoon salt (or, to taste)
•
3 cups cooked rice
•
2-3 Tablespoons chopped cilantro or parsley for garnish (optional)
•
Black pepper or hot sauce, to taste
