2 cups unbleached all-purpose flour
2 cups buttermilk
½ pound cooked boudin sausage, removed from the casing (see link to recipe in Notes)
4 tablespoons unbleached all-purpose flour
1 (12-ounce) can evaporated milk
1 cup whole milk
Kosher salt and freshly ground black pepper
Mashed potatoes, for serving
