Caprese Stuffed Avocados
Second photo has the balsamic reduction on it.
2avocados, cut in half, seed and skin removed
1 csalad greens
1 ccherry tomato, halved
1/2 cfresh mozzarella, diced
2 Tbspbasil pesto (purchased or homemade)
2 Tbspbalsamic reduction, optional
How to Make Caprese Stuffed Avocados
- Plate the avocado on the salad greens and top with the mixture of the tomato, mozzarella and pesto followed by a drizzle of the balsamic reduction if desired.
- To make the balsamic reduction:
Simmer balsamic vinegar until it reduces to 1/2 to 1/4 or the desired thickness and let cool before using.
