vegetable beef soup
I grew up eating vegetable beef soup, although there was never a recipe. It has taken me years to develop this recipe, through trial and error, of course. I started adding sugar after eating Mom Burgess' soup because that is how she made it and it does make a difference. I started adding ketchup after tasting the school's recipe and liking the way it tasted. So, this soup is ever evolving, enjoy, add your own flavors and make it your own.

Ingredients
- 1 1/2 pounds ground beef or soup meat
- 1 - onion, diced
- 1 quart tomatoes, pulsed in blender
- 2 cups mixed vegetables, frozen
- 1/4 - cabbage, chopped
- 4 cups water
- 2 teaspoons beef bouillon "better than boullion"
- 1/4 cup ketchup(optional)
- 2 teaspoons sugar
- 1 teaspoon salt
- - pepper to taste
- 2-4 - potatoes, cut up
How To Make vegetable beef soup

Step 1Brown the ground beef or soup meat in a large pot. Add remaining ingredients all accept the potatoes. Stir, bring to a boil, cover, turn down to a simmer and let simmer about an hour.

Step 2Add potatoes, stir, cover and simmer until potatoes are done. This is also the time to taste the soup to see if you need anymore salt, etc.
