Buttery Flakey Doughnuts (not quite Cronuts™ )

INGREDIENTS
Ingredients:
Croissant Dough:
2 1/4 teaspoons instant yeast
1/4 cup warm water
1/2 cup warm milk
1/3 cup sugar
2 teaspoons salt
1/4 cup unsalted butter
3 1/2 to 4 cups all-purpose flour
Butter Roll-in:
1 pound plus 2 ounces unsalted butter
2 tablespoons all-purpose flour
Custard Filling *
1 cup plus 2 tablespoons milk
1/4 cup sugar
3 tablespoons all-purpose flour
3 egg yolks
1/2 teaspoon pure vanilla extract
3 teaspoons unsalted butter, cut into small pieces
Vanilla Fondant:
2 cups confectioners’ sugar
1 teaspoon pure vanilla extract
Pink food colouring, optional
Cream, as required
Rolling Sugar:
Sugar for dusting if you’re not using fondant
* You can omit the custard and insert red jelly instead.
