1 1/2 cup (375 mL) heavy (35%) cream
1/2 cup (125 mL) whole (3.25%) milk
1/2 cup (125 mL) granulated sugar
1/2 cup (125 mL) water
5 egg yolks, beaten
3 Tbsp (45 mL) unsalted butter
2 Tbsp (30 mL) brown sugar
2 Tbsp (30 mL) maple syrup
1 tsp (5 mL) pure vanilla extract
3 ripe Bartlett pears, quartered, cored, and cut lengthwise into 1/4-inch slices
