1 1/2 cups oil (I use canola)

1 1/2 cups sugar

3 eggs

3 cups self-rising flour

1 teaspoon ground cinnamon

1 teaspoon vanilla extract

1/2 teaspoon nutmeg

3 cups apples, peeled and grated or in small chunks (I grate them on a hand grater and I have used all kinds of apples)

1 cup walnut pieces (could use pecans)
•
1 cup butterscotch chips Butterscotch Icing or Frosting
•
1 cup butterscotch chips

1/4 cup milk
•
2 tablespoons butter
•
1/4 teaspoon salt

2 cups confectionery sugar
