INGREDIENTS
one 4-6 pound chicken
peanut oil, or canola oil for deep-frying
2 lemons, sliced
1/2 bunch flat-leaf (Italian) parsley (2 oz)
1/2 bunch thyme (1/2 oz)
1/4 cup honey
6 cloves of garlic,halved
2 Tbsp black peppercorns
3/4 cup kosher salt
1 gallon water
3 cups all-purpose flour
2 Tbsp garlic powder
2 Tbsp onion powder
2 tsp paprika
2 tsp cayenne
2 tsp kosher salt
1 tsp freshly ground black pepper
1/2 quart buttermilk
rosemary and thyme sprigs for garnish
fine sea salt and freshly ground black pepper
