BUTTERMILK BISCUITS
•2 1/2 cups self-rising flour (or 2 1/2 cups all-purpose flour, 3 1/4 teaspoons baking powder, and 3/8 teaspoon salt if you don't have self-rising flour)
•2 teaspoons sugar
•1/2 teaspoon salt
•4 tablespoons vegetable shortening
•4 tablespoons butter (chilled)
•1 cup chilled buttermilk
SAUSAGE GRAVY
•1lb sage pork sausage
•1/4 cup finely chopped yellow onion
•1/3 cup flour
•4 cups whole milk
•1/2 teaspoon salt
•2 teaspoons black pepper plus more to taste
•1/2 teaspoon ground nutmeg
•1/2 teaspoon poultry seasoning
•2 dashes Worcestershire sauce
•a pinch of cayenne pepper
