INGREDIENTS
2-4 boneless skin-on chicken thighs ((I used 2 thighs here but you can use up to 4 thighs with the amount of sauce in this recipe))
kosher/sea salt (I use Diamond Crystal; Use half for table salt)
freshly ground black pepper
1 Tbsp neutral-flavored oil (vegetable, canola, etc)
3 Tbsp sake ((or water to steam))
1 Tbsp unsalted butter
2 ½ Tbsp soy sauce
2 Tbsp sake
1 Tbsp mirin
1 Tbsp sugar
