INGREDIENTS
3 pounds boneless, skinless, chicken thighs (or breasts but thighs are better)
Sea salt and freshly ground black pepper
1 bottle Franks Hot Sauce
1/2 stick cold butter
1 bag shredded cabbage mix
1 head celery, use tender center hearts, very thinly sliced, almost shaved
1 cup blue cheese dressing or dip - my homemade recipe is best but Marie's is good
1 teaspoon olive oil
1 cup thinly sliced shallots (about 4 ounces)
1/4 cup Hellmann's Light mayonnaise
1 cup Fage Greek yogurt
4 ounces blue cheese, room temperature, crumbled
