1/2 pound of pancetta, sliced thinly or cubed
2 to 3 tablespoons of olive oil
1 red onion, sliced thinly, or chopped finely
1/4 teaspoon red pepper flakes, more or less depending on taste (I used a lot)
2 to 3 tablespoons of dried parsley, more or less depending on taste
2 tablespoons red wine vinegar
2 x 28 ounce cans of red san marzano tomatoes
4 to 6 tablespoons of tomato paste, more or less depending on taste
2 tablespoons minced garlic
Freshly grated Pecorino or Parmesan cheese, to taste
900 gram package of bucatini pasta, cooked
