Browning butter is such a simple thing to do that I am always amazed at the flavor difference it can make. It gives the butter a rich, nutty flavor that complements so many baked goods.

Brown Butter Pecan Pie

Makes 8 to 10 servings

Ingredients:

For the crust:
•
11/4 cups all-purpose flour
•
1 teaspoon granulated sugar
•
1/2 teaspoon salt
•
1/2 cup cold unsalted butter, cut into 1/2-inch cubes
•
2 to 4 tablespoons cold water
•
For the filling:
•
5 tablespoons unsalted butter
•
3 large eggs
•
1/2 cup granulated sugar
•
1/4 cup packed light brown sugar
•
1 cup light corn syrup
•
1 teaspoon vanilla extract
•
1/2 teaspoon salt
•
11/2 cups pecan halves
