INGREDIENTS

1-2 cups mushrooms, diced (optional)
1-2 cups chicken or vegetable broth (plus 2 cups water to thin)
1 teaspoon cayenne pepper, or to your taste
1/2 teaspoon nutmeg
1/4 teaspoon salt + pepper
2-3 cups shredded sharp cheddar cheese, plus more for topping
2 sheets frozen puff pastry, thawed
1 egg, lightly beaten
