3 Tbsp (36g) granulated sugar
1 tsp salt
2 large eggs, room temperature
2 large egg yolks, room temperature
1/2 cup (113g) salted butter, softened
1 cup (8 oz) water
1 cup (200g) granulated sugar
1 tsp cinnamon and/or 1/2 tsp vanilla powder
48oz canola, sunflower or vegetable oil
