I saw a national day announcement for Oatmeal Nut Waffle Day, March 11. I thought, I can do that! So I took my favorite waffle recipe and adapted it to oats and nuts. We really enjoyed these this morning, with plenty left over for the freezer and future breakfasts. I served them with butter and maple syrup.

Ingredients

  • 2 large eggs, lightly beaten
  • 2 cups whole milk
  • 1/4 cup butter, melted
  • 3 tablespoons sugar or cinnamon sugar
  • 1/2 teaspoon salt
  • 3/4 cup whole wheat flour
  • 3/4 cup all-purpose flour
  • 2 teaspoons baking powder
  • 1 cup quick-cooking oats
  • 1 cup pecans, chopped
  • oil or shortening to grease waffle iron

How To Make oatmeal nut waffles

  • Step 1
    Preheat your waffle iron. In a large bowl, whisk eggs and milk together. Whisk in butter, sugar, and salt until well incorporated.
  • Step 2
    Stir flours together with baking powder, or combine in a sifter, and add to the liquid ingredients. Beat well until no lumps of flour remain.
  • Step 3
    Fold in oats and nuts. The batter will be on the thick side.
  • Step 4
    Brush the hot waffle iron well with oil or shortening. Drop batter into waffle iron according to manufacturer's instructions; mine holds about 1/3 to 1/2 cup for each waffle. Bake until waffles are done and a bit crispy on the outside. This may take 4-5 minutes.
  • Step 5
    Remove the waffle to a plate to keep warm. Repeat, oiling the waffle iron for each waffle, until all the batter is used. Serve immediately with butter and syrup.
