low carb waffles

After making about four different low carb waffle recipes that I was not completely happy with I came up with this one. Very pleased with the results. Low carb worthy!!!

Ingredients

  • 3/4 cup almond flour
  • 1/4 cup coconut flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 2 - eggs
  • 1 - egg white
  • 1 cup heavy cream
  • 2 tablespoons oil
  • 2 - egg whites(beaten)
  • 1/4 cup oat flour
  • 2 tablespoons stevia or artificial sweetener of choice

How To Make low carb waffles

  • Step 1
    Whisk together all dry ingredients. I use regular GF oats and put them in my spice grinder till they are flour. Mix together 2 eggs with then take heavy cream and oil and 1 egg white. Add to flour mixture and beat on med speed for about 3 min. Set aside and allow flours to absorb some of the liquid. About 20 min.
  • Step 2
    Take remaining 2 egg whites and beat till stiff as you would for meringue.
  • Step 3
    Fold the beaten egg whites into the flour mixture as not to deflate them.
  • Step 4
    I use my flip over waffle iron and it takes about 3 minutes per side. That is a place to start depending on how hot your iron is. After the first waffle I usually do 3 min on the first side then 2 min on the second side.
  • Step 5
    This makes four / four piece Belgium waffles. I freeze the rest and toaster them for breakfast. I know the oat flour adds a few carbs but it makes all the difference in the way they cook and taste. I hope your come out as good as mine did.
  • Step 6
    I used 1 cup of batter for my waffle iron. I have the round four piece flip waffle iron. This recipe is great to make and freeze for a quick breakfast.
