"Highland Treat" Oat Pancakes or Waffles
1 1/4 cwhole wheat pastry flour
3/4 cscottish oatmeal, uncooked
2 tspbaking powder
1/2 tspbaking soda
1/2 tspsalt, or less (1 teaspoon specified in original recipe)
1 1/2 cbuttermilk, approximately
1/4 cbutter, melted
How to Make "Highland Treat" Oat Pancakes or Waffles
- In a mixing bowl combine the whole wheat pastry flour, Scottish oatmeal, baking powder, baking soda and salt.
- In a separate bowl whisk together the eggs, buttermilk and melted butter.
- Combine the egg mixture with the flour mixture and stir *just* until combined
- Heat a pan or waffle iron with a small amount of oil or butter. Measure out about 1/4-1/3 cup of the batter for each pancake or waffle; cook until golden brown on each side. Our pancakes were served with strawberry jam and butter.
