"highland treat" oat pancakes or waffles
Printed on the back package of Bob's Red Mill Scottish Oatmeal. You could substitute Irish oatmeal (the Scots won't mind) but I'm sure oat bran will work, too.

Ingredients
- 1 1/4 cups whole wheat pastry flour
- 3/4 cup scottish oatmeal, uncooked
- 2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt, or less (1 teaspoon specified in original recipe)
- 2 - eggs
- 1 1/2 cups buttermilk, approximately
- 1/4 cup butter, melted
How To Make "highland treat" oat pancakes or waffles

Step 1In a mixing bowl combine the whole wheat pastry flour, Scottish oatmeal, baking powder, baking soda and salt.

Step 2In a separate bowl whisk together the eggs, buttermilk and melted butter.

Step 3Combine the egg mixture with the flour mixture and stir *just* until combined

Step 4Heat a pan or waffle iron with a small amount of oil or butter. Measure out about 1/4-1/3 cup of the batter for each pancake or waffle; cook until golden brown on each side. Our pancakes were served with strawberry jam and butter.
