Printed on the back package of Bob's Red Mill Scottish Oatmeal. You could substitute Irish oatmeal (the Scots won't mind) but I'm sure oat bran will work, too.

Ingredients

  • 1 1/4 c
    whole wheat pastry flour
  • 3/4 c
    scottish oatmeal, uncooked
  • 2 tsp
    baking powder
  • 1/2 tsp
    baking soda
  • 1/2 tsp
    salt, or less (1 teaspoon specified in original recipe)
  • 2
    eggs
  • 1 1/2 c
    buttermilk, approximately
  • 1/4 c
    butter, melted

How to Make "Highland Treat" Oat Pancakes or Waffles

Step-by-Step

  1. In a mixing bowl combine the whole wheat pastry flour, Scottish oatmeal, baking powder, baking soda and salt.
  2. In a separate bowl whisk together the eggs, buttermilk and melted butter.
  3. Combine the egg mixture with the flour mixture and stir *just* until combined
  4. Heat a pan or waffle iron with a small amount of oil or butter. Measure out about 1/4-1/3 cup of the batter for each pancake or waffle; cook until golden brown on each side. Our pancakes were served with strawberry jam and butter.
