Made with Baking Mix and Canned Pumpkin, these are a nice change in the fall around the holidays for breakfast.

  • 2 1/3 c
    baking mix (i use pioneer brand)
  • 1 1/2 c
    milk, 2%
  • 1 c
    canned pumpkin
  • 3 Tbsp
    vegetable oil
  • 1 Tbsp
    pumpkin pie spice
  • 3 Tbsp
    light brown sugar
  • 1/4 c
    granulated sugar
  • 2

How to Make Fast & Easy Pumpkin Waffles


  1. Add baking mix to a large bowl. Add the remaining ingredients and whisk by hand. The batter may be a little lumpy.
  2. Spray a waffle iron and preheat. Ladle into waffle iron and cook according to manufacturer's directions.
  3. Serve hot with either butter and maple syrup, applesauce or honey
