Made with Baking Mix and Canned Pumpkin, these are a nice change in the fall around the holidays for breakfast.

Ingredients

  • 2 1/3 cups baking mix (i use pioneer brand)
  • 1 1/2 cups milk, 2%
  • 1 cup canned pumpkin
  • 3 tablespoons vegetable oil
  • 1 tablespoon pumpkin pie spice
  • 3 tablespoons light brown sugar
  • 1/4 cup granulated sugar
  • 2 - eggs

How To Make fast & easy pumpkin waffles

  • Step 1
    Add baking mix to a large bowl. Add the remaining ingredients and whisk by hand. The batter may be a little lumpy.
  • Step 2
    Spray a waffle iron and preheat. Ladle into waffle iron and cook according to manufacturer's directions.
  • Step 3
    Serve hot with either butter and maple syrup, applesauce or honey
