Ingredients

  • 1 cup all purpose flour
  • 1 tablespoon sugar
  • 1 teaspoon sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1 1/4 cups buttermilk
  • 1 egg
  • 2 tablespoons unsalted butter
  • 2 ripe bananas, sliced
  • vegetable oil
  • warmed maple syrup

How To Make banana buttermilk waffles

  • Step 1
    Combine flour, sugar, baking powder, soda, cinnamon and salt in a large bowl - mix well.
  • Step 2
    Combine the buttermilk, egg and melted butter in a bowl and whisk until well blended.
  • Step 3
    In another bowl, place 1/2 of the sliced bananas and mash them coarsely - mixture will be lumpy. Add the bananas to the buttermilk mixture; then stir into flour mixture. Whisk until the batter is smooth.
  • Step 4
    Preheat a waffle iron and brush lightly with the oil. Ladle enough batter for 1 waffle and cook until done. Repeat with remaining batter. Transfer to a platter and into the oven at a low temp to keep warm.
  • Step 5
    Serve waffles garnished with remaining banana slices and drizzle with warm maple syrup.
