Ingredients

  • 1 cup almond flour
  • 3 tablespoons coconut flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking powder
  • 3 tablespoons butter, melted
  • 3/4 cup half and half
  • 3 large eggs
  • 1 1/2 teaspoons pure vanilla extract

How To Make yummy low-carb keto gluten-free pancakes

  • Step 1
    In a medium bowl, whisk almond flour, coconut flour, salt, and baking powder.
  • Step 2
    In a large bowl, add melted butter, half & half, eggs, and vanilla extract and whisk until combined.
  • Step 3
    While whisking, slowly add the dry ingredients to the liquid ingredients in the large bowl. The batter will be somewhat thick. Add additional half & half, if needed, to make the consistency of what is shown in the photo.
  • Step 4
    Heat a nonstick griddle or skillet on medium heat and add approximately 1 Tablespoon butter to the pan/griddle to melt. Spoon about 1/4-1/2 cup batter onto prepared heated surface and allow to cook, turning down heat as needed to medium-low to allow pancakes to cook through. Flip and continue to cook.
  • Step 5
    Serve with butter and sugar-free syrup.

    Serves 2 generously
