Ingredients
- 1 cup almond flour
- 3 tablespoons coconut flour
- 1/2 teaspoon salt
- 1/2 teaspoon baking powder
- 3 tablespoons butter, melted
- 3/4 cup half and half
- 3 large eggs
- 1 1/2 teaspoons pure vanilla extract
How To Make yummy low-carb keto gluten-free pancakes

Step 1In a medium bowl, whisk almond flour, coconut flour, salt, and baking powder.

Step 2In a large bowl, add melted butter, half & half, eggs, and vanilla extract and whisk until combined.

Step 3While whisking, slowly add the dry ingredients to the liquid ingredients in the large bowl. The batter will be somewhat thick. Add additional half & half, if needed, to make the consistency of what is shown in the photo.

Step 4Heat a nonstick griddle or skillet on medium heat and add approximately 1 Tablespoon butter to the pan/griddle to melt. Spoon about 1/4-1/2 cup batter onto prepared heated surface and allow to cook, turning down heat as needed to medium-low to allow pancakes to cook through. Flip and continue to cook.
