Tender and fluffy, tasty and delicious, these low-carb pancakes are made with only 5 ingredients and taste better than restaurant pancakes. Everyone will love these yummy pancakes-add sugar-free chocolate chips, berries or nuts and bananas. Perfect for diabetic, gluten-free and low-carb diets! It took me a long time to come up with this perfect recipe-the texture is wonderful.

Ingredients

  • 8 ounces cream cheese, softened
  • 4 large eggs
  • 1 1/2 teaspoons pure vanilla extract
  • 2/3 cup almond flour
  • 2 teaspoons baking powder

How To Make vanilla keto pancakes

  • Step 1
    In a large bowl, whisk cream cheese 1-2 minutes. Add eggs and vanilla and whisk to combine with cream cheese. Add almond flour and baking powder and whisk until battter is smooth.
  • Step 2
    In a medium skillet over medium heat on stovetop, pour 1/3 cup batter into heated pan, wait until bubbles form on top and flip, turning heat down to medium low so pancakes won't cook too fast.
  • Step 3
    Remove to plate and repeat with remaining batter.
  • Step 4
    Serve with butter and sugar-free syrup. You can also add sugar-free chocolate chips or berries, sliced bananas and/or nuts. They're great eaten plain as vanilla pancakes too.
