sweet potato pancakes (my way)
Had some leftover sweet potatoes , so decided to make pancakes with them, turned out real good

Ingredients
- 2 cups flour
- 1/2 cup sugar
- 1 teaspoon baking powder
- 1 teaspoon cinnamon
- 1/4 teaspoon freshly grated nutmeg
- 1 cup mashed sweet potatoes
- 2 tablespoons melted butter
- 1 large egg
- 1 can evapoated milk
How To Make sweet potato pancakes (my way)

Step 1In large bowl combine flour, sugar, baking powder, cinnamon, and nutmeg, I whisk it so it is blended,

Step 2In a small bowl mash the sweet potato and melted butter together.

Step 3In the dry ingredients make a well in the middle add 1 egg and the mashed sweet potatoes, pour in condensed milk combine with whisk .

Step 4In heavy pan I used spray, but you can use any oil you like, add batter 1/2 cup per pancake turning once till both sides are brown.
