swedish pancakes with jam and berries

These pancakes are crepe-like and are delicious with jam, berries, and whipped cream! I usually skip the whipped cream but my family loves it that way. I originally got this recipe from Taste of Home. Enjoy!

Ingredients
- 2 cups milk
- 4 - eggs
- 1 tablespoon vegetable oil
- 1 1/2 cups all-purpose flour
- 3 tablespoons sugar
- 1/4 teaspoon kosher salt
- - lingonberries or raspberries
- - raspberry jam or other fruit jam, warmed
- - whipped topping
How To Make swedish pancakes with jam and berries

Step 1Combine the first six ingredients in a blender until fully blended.

Step 2Grease a non-stick 8-inch skillet and heat it on medium heat. Pour a quarter cup of the batter into the center of the pan. Lift and tilt the pan to spread the batter thinly across the bottom. Cook until the top looks dry. Flip and cook for another 15-20 seconds.

Step 3Repeat with the remaining batter, adding additional oil to the pan as needed. Stack the finished pancakes with either wax paper or paper towels in between each one - and keep lightly covered to keep warm.(You could also heat them up in a microwave - for about 10 seconds or so if you wish)

Step 4Fold the pancakes into quarters to serve. Top with raspberry (or other) jam, berries of choice, and whipped cream. Enjoy!
