savory potato pancakes
"Potato pancakes" have always sounded good to me, but execution has eluded me over the years. My recent increased interest in cooking has taught me a lot, and I decided to try them again today. All I can say is "YUM!" Even my 14-yr-old, who doesn't much like onions, loved these. I know because he asked for seconds and cleaned his plate! Weird kid, though; he put peanut butter on them. LOL

Ingredients
- 3/4 cup mashed potatoes (i use idahoan instant
- 2 tablespoons minced green onion
- 1/4 cup grated cheddar cheese
- 1/4 cup unsweetened almond milk
- 1 - egg
- 1 pinch sea salt
- 1 dash black pepper
- 1 dash paprika
- 1/5 cup basic pancake mix
- - butter
- - bacon drippings
- - panko bread crumbs
- - plain yogurt or sour cream
- - maple syrup
How To Make savory potato pancakes

Step 1Mix potatoes, onions, cheese, egg and seasonings and blend until smooth and onions are well minced, adding milk as needed to make it a bit soupy.

Step 2Fold in pancake mix until well combined, adding milk as needed for a pourable batter.

Step 3Using melted butter and bacon drippings, fry 1/4 C of batter over medium heat, sprinkling the batter with panko. When edges are dry and some bubbles appear, carefully flip.

Step 4Keep warm in the oven until ready to serve. Top with sour cream and syrup or other desired condiments.
