Perfect fall breakfast! Not overly sweet but you can add chocolate or maple chips and make it sweeter. These are hearty and will appeal to all pumpkin lovers!

Ingredients

  • 2 cups all purpose flour
  • 1/4 cup dark brown sugar
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1 tablespoon pumpkin pie spice
  • 1/2 teaspoon salt
  • 1 cup canned pumpkin puree
  • 1 1/2 cups evaporated milk
  • 1 - egg
  • 2 tablespoons canola oil
  • 2 tablespoons apple cider vinegar
  • 1/8 cup water

How To Make pumpkin pie pancakes

  • Step 1
    Combine dry ingredients in a large bowl. Whisk well to avoid clumps.
  • Step 2
    In a separate bowl, combine wet ingredients except water.
  • Step 3
    Add wet ingriedients to dry, whisking well to avoid clumps.
  • Step 4
    Add water to batter and mix well.
  • Step 5
    Grease a medium- sized skillet and heat on medium.
  • Step 6
    Add about 1/4 cup of batter. Allow batter to cook until you can easily slide a spatula under the pancake and flip, about 2 minutes.
  • Step 7
    Cook opposite side 2 minutes or until golden and cooked through.
  • Step 8
    Drizzle hot pancake with warmed maple syrup.
  • Step 9
    Enjoy!
