They smell like pumpkin pie in the oven! Created for my sister-in-law for a Fall breakfast treat.

    flour
  • 1/4 can(s)
    brown sugar
  • 1/2 tsp
    soda
  • 1/2 tsp
    cinnamon
  • 1/2 tsp
    ginger
  • 1/4 tsp
    nutmeg
  • 1/4 tsp
    salt
  • 1/2 can(s)
    pumpkin, canned
  • 1 c
    milk
  • 1
    egg
  • 1/2 c
    pecans, in pieces
  • ·
    canola oil
  • ·
    butter
  • ·
    syrup
  • ·
    whipped cream

How to Make Pumpkin Pecan Pancakes

Step-by-Step

  1. In small bowl, mix flour, brown sugar, soda, cinnamon, ginger, nutmeg & salt.
  2. Mix pumpkin, milk and egg together.
  3. Blend dry ingredients into pumpkin mixture. Add pecans, reserving a few for topping.
  4. Heat griddle to medium low and add canola oil. When hot, pour 1/4 cup of mixture on the griddle. Cook until bubbles appear on top and then turn over. Adjust heat if bubbles do not appear before burning or add a little water to the mixture to thin. Serve immediately with butter, syrup and whipped cream to taste with a sprinkle of pecans on top.
