These Potato Pancakes are quite delicious, and easy to make as well.

Ingredients For potato pancakes

  • 2 cups of peeled, diced, russet potatoes
  • 2 large eggs
  • 2 tablespoons milk (i used 2% milk)
  • 2 tablespoons melted butter
  • 2 tablespoons of flour
  • 3/4 teaspoon of salt
  • 1/8 teaspoon of black pepper
  • 1/4 of a small onion, diced

How To Make potato pancakes

  • 1
    Place the potatoes in a blender, and blend on high for a few seconds or so.
  • 2
    Pour the blended potatoes in a large bowl, along with the remaining ingredients.

    Coat the inside of a skillet or griddle with olive oil cooking spray.
  • 4
    When making each pancake, pour a 1/4 cup of the potato-mixture into a hot non-stick skillet, or on a heated griddle.

    Cook both sides of pancakes for about one minute, or until they are lightly golden brown.

    Top each pancake with either maple syrup, or with applesauce.
