These Potato Pancakes are quite delicious, and easy to make as well.

Ingredients
- 2 cups of peeled, diced, russet potatoes
- 2 large eggs
- 2 tablespoons milk (i used 2% milk)
- 2 tablespoons melted butter
- 2 tablespoons of flour
- 3/4 teaspoon of salt
- 1/8 teaspoon of black pepper
- 1/4 of a small onion, diced
How To Make potato pancakes

Step 1Place the potatoes in a blender, and blend on high for a few seconds or so.

Step 2Pour the blended potatoes in a large bowl, along with the remaining ingredients.

Step 3Coat the inside of a skillet or griddle with olive oil cooking spray.

Step 4When making each pancake, pour a 1/4 cup of the potato-mixture into a hot non-stick skillet, or on a heated griddle.

Step 5Cook both sides of pancakes for about one minute, or until they are lightly golden brown.

Step 6Top each pancake with either maple syrup, or with applesauce.
