one big berry breakfast

Got up this morning & wanted something w/ blueberries & couldn't find a recipe to satisfy my desire. So when I reached in the freezer to get blueberries, I grabbed some cherries and this is what I came up with! And we decided that it's a keeper.I used honey as the sweeter for this recipe to keep the sugar content down. I hope you enjoy as much as my family did!

Ingredients

  • FRUIT BOTTOM
  • 2 cups cherries, frozen or fresh
  • 2 cups blueberries, frozen or fresh
  • 2 tablespoons lime or lemon juice
  • 4 tablespoons honey
  • PANCAKE TOP
  • 2 cups bisquick
  • 2 teaspoons baking powder
  • 1 1/8 cups half and half or milk
  • 2 large eggs

How To Make one big berry breakfast

  • Step 1
    Pre-heat oven to 350ᵒF & grease a 10x15 jelly roll pan.
  • Step 2
    In a medium sauce pan, combine cherries & blueberries. Set stove top to medium-low.
  • Step 3
    Add lime/lemon juice & honey and stir to combine. Stirring occasionally.
  • Step 4
    While fruit is doin’ it’s thang, mix ingredients for pancake top in a medium bowl, until completely combined. Set aside.
  • Step 5
    Combine cornstarch & water in a small bowl and keep near the stove top.
  • Step 6
    Once the fruit mixture has thawed, if from frozen, and is juicy, turn stove top up to medium-high.
  • Step 7
    Slowly pour in cornstarch mixture while stirring.
  • Step 8
    Fruit mixture will start to thicken. Once it starts to bubble, stop stirring and let it bubble for 1 minute. Turn off stove top.
  • Step 9
    Pour fruit mixture into the jelly roll pan and spread evenly.
  • Step 10
    Pour pancake mixture over top as evenly as you can, do not spread.
  • Step 11
    Bake on middle rack in oven for 10-15 minutes, just until pancake is cooked through.
  • Step 12
    Top w/ syrup, whip cream, ice cream or nothing…whatever you desire. And please feel free to tweak my recipe and comment! Food is not a secret, it is to be shared like Jesus!
