  • 2 cups flour
  • 3 tablespoons sugar
  • 2 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 1/8 teaspoon ground ginger
  • 2 very ripe bananas
  • 2 large eggs
  • 2 cups buttermilk
  • 2 tablespoons unsalted butter, melted

How To Make nana banana pancakes

  • Step 1
Sift the dry ingredients (flour-ginger) in a large bowl.
  • Step 2
In another bowl, mash the bananas well. Add the eggs and buttermilk. Whisk until well combined.
  • Step 3
Add the dry ingredients to the wet. Stir, but only until smooth. Don't overmix.
  • Step 4
Add the melted butter to the batter. If it seems too thick, add a little more buttermilk. Don't overmix!
  • Step 5
Heat a griddle over medium high heat. Add butter to grease. Pour 1/4 cup of batter at a time and cook until bubbles form on the edges and the pancake is just lightly browned on the bottom. Flip. Cook until lightly browned on the other side. Serve with syrup, Caramelized bananas on top are nice too!
