I am not a fan of super fluffy pancakes, and always thin down the batter in whatever recipe I'm using. But I usually make 1 or 2 before I remember to thin the batter. So I'm listing my personal tweaks here so that every pancake is the way I prefer! When we have "breakfast for dinner," this batch makes 2 generous servings.

Ingredients

  • 1 egg
  • 2 tablespoons butter, melted
  • 1/2 cup milk
  • 1/4 cup water, or more
  • 1 cup flour (I use a little less)
  • 1 tablespoon sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 2 tablespoons butter, melt a little in the pan for each batch
  • TOPPING SUGGESTIONS
  • rhubarb-strawberry compot, berries, apple or pear slices, honey, maple syrup, banana slices, melted jelly, fruit syrup, powdered sugar

How To Make just pancakes

  • Step 1
    Melt butter in the microwave. Let cool while you beat egg, add milk, and then the slightly cooled, melted butter.
  • Step 2
    Add dry ingredients and mix together. Some flour lumps may remain.
  • Step 3
    Heat a frying pan with a little butter (or a spritz of pan spray).
  • Step 4
    When hot, add about 1/3 - 1/2 cup batter. After many bubbles form, flip and cook the other side. If you think the first one is too thick, add a little more water to the batter.
  • Step 5
    Place the pancakes in a warm oven while you finish the batter.
  • Step 6
    NOTE: I usually make one pancake at a time, but depending on the size of the skillet, one could make several smaller ones.
