just pancakes
I am not a fan of super fluffy pancakes, and always thin down the batter in whatever recipe I'm using. But I usually make 1 or 2 before I remember to thin the batter. So I'm listing my personal tweaks here so that every pancake is the way I prefer! When we have "breakfast for dinner," this batch makes 2 generous servings.

Ingredients
- 1 egg
- 2 tablespoons butter, melted
- 1/2 cup milk
- 1/4 cup water, or more
- 1 cup flour (I use a little less)
- 1 tablespoon sugar
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 2 tablespoons butter, melt a little in the pan for each batch
- TOPPING SUGGESTIONS
- rhubarb-strawberry compot, berries, apple or pear slices, honey, maple syrup, banana slices, melted jelly, fruit syrup, powdered sugar
How To Make just pancakes

Step 1Melt butter in the microwave. Let cool while you beat egg, add milk, and then the slightly cooled, melted butter.

Step 2Add dry ingredients and mix together. Some flour lumps may remain.

Step 3Heat a frying pan with a little butter (or a spritz of pan spray).

Step 4When hot, add about 1/3 - 1/2 cup batter. After many bubbles form, flip and cook the other side. If you think the first one is too thick, add a little more water to the batter.

Step 5Place the pancakes in a warm oven while you finish the batter.

Step 6NOTE: I usually make one pancake at a time, but depending on the size of the skillet, one could make several smaller ones.
