Ingredients

  • 3/4 c
    fine cornmeal
  • 3/4 c
    all purpose flour
  • 2 Tbsp
    sugar
  • 1/2 tsp
    baking powder
  • 1/2 tsp
    baking soda
  • 1/2 tsp
    kosher salt
  • 1 1/4 c
    buttermilk
  • 3 Tbsp
    melted butter
  • 2
    eggs

How to Make Johnnycakes

Step-by-Step

  1. Mix dry ingredients.
  2. In a separate bowl, whisk together the wet ingredients, then add to the dry mixture a little at a time until it's well blended and smooth.
  3. Cook 1/4 cupfuls of batter in a greased skillet until golden brown, 3 minutes per side. Serve with maple syrup. Serves 4.
