- 3/4 cup fine cornmeal
- 3/4 cup all purpose flour
- 2 tablespoons sugar
- 1/2 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon kosher salt
- 1 1/4 cups buttermilk
- 3 tablespoons melted butter
- 2 - eggs

Step 1Mix dry ingredients.

Step 2In a separate bowl, whisk together the wet ingredients, then add to the dry mixture a little at a time until it's well blended and smooth.

Step 3Cook 1/4 cupfuls of batter in a greased skillet until golden brown, 3 minutes per side. Serve with maple syrup. Serves 4.
