This makes a lovely breakfast, especially when paired with some crisp bacon and orange juice!

Ingredients

  • 3/4 cup fine cornmeal
  • 3/4 cup all purpose flour
  • 2 tablespoons sugar
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon kosher salt
  • 1 1/4 cups buttermilk
  • 3 tablespoons melted butter
  • 2 - eggs

How To Make johnnycakes

  • Step 1
    Mix dry ingredients.
  • Step 2
    In a separate bowl, whisk together the wet ingredients, then add to the dry mixture a little at a time until it's well blended and smooth.
  • Step 3
    Cook 1/4 cupfuls of batter in a greased skillet until golden brown, 3 minutes per side. Serve with maple syrup. Serves 4.
