When I was growing up there was a local restaurant that made these. It was always a real treat when were able to go there and order these. Alas that restaurant is know more. So in order to fix that nostalgic craving I had to learn to make these. Periodically my wife will specifically ask for these when I cook breakfast on the weekend.

- 3 large eggs
- 1/2 teaspoon fine salt
- 3 tablespoons sugar
- 1 cup warmed milk
- 1 teaspoon vanilla
- 2 tablespoons unsalted butter, melted
- 1 cup ap flour
- 2 teaspoons veg shortening
- confectioners sugar
How To Make german pancake

Step 1Pre-heat oven to 425 F. Place a well seasoned cast-iron skillet in the oven and allow to preheat also.

Step 2In a medium bowl, whisk together the eggs, salt, sugar, milk, vanilla, and butter. Then whisk in the flour to make a smooth batter.

Step 3Carefully remove the cast-iron skillet from the oven and brush the inside with the shortening. Pour in the batter, return it to the oven, and bake for 15 minutes.

Step 4Lower the oven to 350 degrees F. and continue baking until puffed and golden brown (this should take about 13 to 15 minutes more). Run a knife around the edge of the skillet and slide onto your plate. Sift the confectioners' sugar over the pancake.
