eggnog pancakes
These Eggnog Pancakes were light and fluffy. And tasted SO GOOD! I enjoy them with a light maple syrup or cinnamon-flavored applesauce.

Ingredients
- 1 cup all-purpose flour
- 1 1/2 teaspoons baking powder
- 1/8 teaspoon salt
- 1/8 teaspoon ground nutmeg
- 1 large egg, lightly beaten
- 1 1/4 cups eggnog
How To Make eggnog pancakes

Step 1In a medium-size bowl, whisk together the flour, baking powder, salt, and nutmeg. Then set the bowl aside.

Step 2In a separate bowl, mix together the egg and eggnog. Then add to the dry ingredients mixture. Stir together until well combined.

Step 3Spray the inside of a 10-inch skillet with olive oil and non-stick cooking spray. (I used a granite stone skillet.) Then place the skillet over medium heat.

Step 4Pour 1/4 cup of pancake batter into the stick, and cook until pancakes are golden-brown, then turn the pancakes over when they start to appear bubbling on top.

Step 5Continue cooking the other side of pancakes for about 1 minute and 15 seconds. (Or until pancakes appear to be a light golden brown.)

Step 6Serve pancakes with cinnamon-flavored applesauce or pure maple syrup. (I especially enjoyed mine with the cinnamon-flavored applesauce.)

Step 7With this recipe, I was able to make 7 (4-inch circular) Eggnog Pancakes.
