I'm known as "The Pancake Lady" partly due to a Blue Ribbon I won from Just A Pinch for my Carrot Cake Pancakes and the rest is because pancakes are filling for a crowd or freeze and reheat well for having a hearty breakfast on a different day. I love playing around with different pancake flavors but some times, you just want a simple pancake, nothing extra. This recipe was inspired by Martha Stewart's Easy Basic Pancake recipe but any changes or omissions are completely mine.

Ingredients For basic pancakes

  • 1 c
    flour
  • 2 tsp
    baking powder
  • 1 c
    milk
  • 1 lg
    egg
  • 2 Tbsp
    sugar
  • 1/2 tsp
    salt
  • 2 Tbsp
    butter, melted

How To Make basic pancakes

  • 1
    Whisk together milk and butter. Add in the egg.
  • 2
    Add all the dry ingredients and whisk until just moistened
  • 3
    Measure out 1/4 to 1/3 cup batter and place on hot and oiled griddle. Cook pancakes 1 to 2 minutes on each side until done.
