  • 3/4 c
    aunt jemima pancake mix
  • 1 tsp
  • 1/2 c
    whole milk
  • 3 large
  • 1/3 c
  • 2 large
    tart apples
  • 1/4 c
    butter, melted
  • 1/4 c
    chopped pecans
  • 1 tsp
    ground cinnamon

How to Make Baked Apple Pecan Pancakes


  1. Pare and thinly slice the apples. Preheat oven to 450° F.
  2. Combine pancake mix, milk, eggs and the teaspoon of sugar. Mix well
  3. Place melted butter and apples in a 9 or 10 inch cast iron skillet and cook over medium heat until tender. Remove from heat and sprinkle with chopped nuts.
  4. Pour batter evenly over nuts and apples.
  5. Combine the 1/3 cup of sugar with the cinnamon and sprinkle over batter. Bake at 450°F for 10 to 12 minutes or until pancake is puffed and sugar is melted. Loosen sides of pancake, cool slightly and cut into wedges.
