Ingredients
- 6 large eggs
- 1 1/2 cups milk
- 1 cup flour
- 3 tablespoons sugar
- 1 teaspoon vanilla
- 1/2 teaspoon salt
- 3/4 teaspoon cinnamon
- 1/2 cup unsalted butter
- 2 large granny smith apples
- 3 tablespoons brown sugar, packed
How To Make baked apple pancake

Step 1Preheat oven to 425F.

Step 2Place the eggs, milk, flour, sugar, vanilla, salt and cinnamon in a blender jar. Set aside.

Step 3Put butter in a 9x13 Pyrex baking dish, then into oven to melt. Careful not to let it burn. Remove from oven.

Step 4Peel apples and slice them thinly. Arrange the apples in the baking pan, over the melted butter. Put the pan back in the oven until the butter sizzles.

Step 5Meanwhile, blend the ingredients in the blender jar until the batter is smooth. When the sizzling apples come out of the oven, pour the batter slowly over the apples. Sprinkle with brown sugar.

Step 6Return pan to the oven for 20 minutes. Test for doneness with a sharp knife in the center. If it comes out clean, the pancake is done.

Step 7Cut in serving pieces and serve immediately. Maple syrup if desired.
