anna's pumpkin pancakes

I received a "meal kit" for making these pancakes when I signed up with one of those companies that sends ingredients for a complete meal to your door. I ended up quitting the service after the first shipment, but the pancakes were delicious after I made some modifications to the recipe (i.e. it did not call for enough liquid and the batter was way too thick for the first pancake). This is my revised version of the company's recipe. Milk and water can be adjusted as desired.

Ingredients For anna's pumpkin pancakes

  • 1/2 c
    water
  • 1/2 c
    milk
  • 3/4 c
    canned pumpkin
  • 1/8 tsp
    salt
  • 1
    egg
  • 1 Tbsp
    brown sugar
  • 1 tsp
    vanilla extract
  • 1/2 tsp
    nutmeg
  • 1/2 tsp
    cinnamon
  • 1 Tbsp
    vegetable oil
  • 1-1/2 c
    bisquick baking mix

How To Make anna's pumpkin pancakes

    Place all ingredients EXCEPT baking mix in a large mixing bowl and whisk together.

    Pour baking mix into egg-pumpkin mixture and stir until a moistened batter forms. Batter will be slightly lumpy.

    Lightly coat a medium non-stick pan with cooking spray and place over medium-high heat. Pour ¼ cup batter into hot pan and cook until bubbles form and the edges are dry, 1-3 minutes.

    Flip and cook pancake until browned on second side (1 minute). Replace with remaining batter, one pancake at a time, using additional cooking spray as necessary.

    Serve with butter and syrup.
