welsh rarebit with a kick

Jamie Oliver takes the traditional Welsh rarebit recipe up a notch here. I like his style!

Ingredients

  • 2 large egg yolks
  • 2/3 cup creme fraiche
  • 1 teaspoon english mustard powder
  • 1/2 cup freshly grated cheddar cheese
  • - sea salt and freshly ground black pepper, to taste
  • 4 tablespoons chilli jam, to taste
  • 4 slices (thick) good-quality bread
  • - worcestershire sauce, to taste

How To Make welsh rarebit with a kick

  • Step 1
    Preheat a grill pan (or any pan if you don't have one).
  • Step 2
    Whisk the egg yolks with the creme fraiche and mustard powder, then stir in the cheese. Season to taste with salt and pepper and mix well.
  • Step 3
    Toast your thick-sliced bread lightly on the grill pan.
  • Step 4
    Smear a good tablespoon, or so, of the chilli jam onto the toast, right to the edges. Spoon on 1/4 of the rarebit mixture, spreading it right to the edges.
  • Step 5
    Grill the bread until the mixture gets hot and bubbly. Put onto plates. Use a knife to slice a criss-cross pattern onto the topping, then drizzle with some Worcestershire sauce.
