walnut pancakes

Every other Sunday is pancake Sunday at our house. This is the recipe that I came up with after many tries. Topped off with butter and syrup they are sooo good. At least, that's what my husband says...every other Sunday!

Ingredients

  • 1 cup self rising flour
  • 1 tablespoon baking powder
  • 1 tablespoon sugar (i use sugar substitute, splenda etc.)
  • 1 - egg (can use egg whites)
  • 1/2 tablespoon oil
  • 1/2 - 1 teaspoons vanilla extract
  • 1 cup milk (i use skim)
  • 1/4 cup walnut pieces or pecans etc.

How To Make walnut pancakes

  • Step 1
    Mix self-rising flour, baking soda and sugar together. Beat egg, add oil and vanilla to beaten egg. Add to flour mixture. Then add milk. When thoroughly mixed, stir in nuts.
  • Step 2
    Pour by 1/4 or 1/2 cupfuls on hot griddle or skillet. Cook until bubbles appear on top. Turn, cook until golden brown. Makes 6 medium or 4 large pancakes.
  • Step 3
    Large nuts can be chopped by putting in a baggie and pounding with the smooth side of a meat hammer/tenderizer.
