walnut pancakes
Every other Sunday is pancake Sunday at our house. This is the recipe that I came up with after many tries. Topped off with butter and syrup they are sooo good. At least, that's what my husband says...every other Sunday!

Ingredients
- 1 cup self rising flour
- 1 tablespoon baking powder
- 1 tablespoon sugar (i use sugar substitute, splenda etc.)
- 1 - egg (can use egg whites)
- 1/2 tablespoon oil
- 1/2 - 1 teaspoons vanilla extract
- 1 cup milk (i use skim)
- 1/4 cup walnut pieces or pecans etc.
How To Make walnut pancakes

Step 1Mix self-rising flour, baking soda and sugar together. Beat egg, add oil and vanilla to beaten egg. Add to flour mixture. Then add milk. When thoroughly mixed, stir in nuts.

Step 2Pour by 1/4 or 1/2 cupfuls on hot griddle or skillet. Cook until bubbles appear on top. Turn, cook until golden brown. Makes 6 medium or 4 large pancakes.

Step 3Large nuts can be chopped by putting in a baggie and pounding with the smooth side of a meat hammer/tenderizer.
