Walnut Pancakes

Every other Sunday is pancake Sunday at our house. This is the recipe that I came up with after many tries. Topped off with butter and syrup they are sooo good. At least, that's what my husband says...every other Sunday!

Ingredients

1 c
self rising flour
1 Tbsp
baking powder
1 Tbsp
sugar (i use sugar substitute, splenda etc.)
1
egg (can use egg whites)
1/2 Tbsp
oil
1/2 - 1 tsp
vanilla extract
1 c
milk (i use skim)
1/4 c
walnut pieces or pecans etc.

How to Make Walnut Pancakes

Step-by-Step

  • 1Mix self-rising flour, baking soda and sugar together.
    Beat egg, add oil and vanilla to beaten egg. Add to flour mixture. Then add milk. When thoroughly mixed, stir in nuts.
  • 2Pour by 1/4 or 1/2 cupfuls on hot griddle or skillet. Cook until bubbles appear on top. Turn, cook until golden brown.
    Makes 6 medium or 4 large pancakes.
  • 3Large nuts can be chopped by putting in a baggie and pounding with the smooth side of a meat hammer/tenderizer.
