waffle crispy surprise

I love breakfast, BUT eggs just do not always excite me!! But when I experimented with this waffle treat...lets just say, it is our favorite weekend protein rich feast!! Cornmeal adds an extra crunch to the waffle.

Ingredients

  • 1 cup all purporse flour
  • 1 cup yellow cornmeal
  • 3 teaspoons baking powder
  • 1 teaspoon salt
  • 3 - eggs, well beaten
  • 1 3/4 cups milk
  • 2 tablespoons sugar
  • 5 tablespoons melted crisco/cool well
  • 2 - bananas
  • 2 cups greek yogurt/plain
  • 1 cup chopped walnuts
  • - maple syrup warmed
  • 2/3 cup honey

How To Make waffle crispy surprise

  • Step 1
    preheat waffle iron, I use a Belgium style but square will work
  • Step 2
    Mix dry ingredients in a mixing bowl. combine well beaten eggs, milk and sugar. Add to dry mixture; Blend well, add cooled shortening. Bake on iron per directions for the type you are using.
  • Step 3
    Cut bananas into bite size pieces. Mix Greek yogurt with honey. Chop walnuts. Keep finished waffles warm in the oven until batter completed.
  • Step 4
    To Assemble: place each waffle on a warm plate, top with 1/4 c yogurt, 1/2 c chopped banana, top with 1/4 c nuts.
  • Step 5
    Drizzle with Warm maple syrup. ENJOY. I can usually get 4 nice size waffles out of this recipe using my type iron.
