Here is another bookmarked recipe from my mom's old cookbook. Mom used to make this for breakfast a lot and it was delicious and very filling.

Ingredients

  • 1 tablespoon butter
  • 1 package 6 oz. sliced canadian-style bacon or 6 thin slices fully cooked smoked ham
  • 1 can 8 0z. crushed pineapple, well drained
  • 2 tablespoons packed brown sugar
  • 1 1/2 cups bisquick baking mix
  • 1/2 cup milk
  • 1 - egg
  • - maple-flavored syrup

How To Make upside-down oven pancake

  • Step 1
    Heat the butter in a round pan, 9 x 1 1/2 inches, in a 400 degree oven until the butter is melted.
  • Step 2
    Arrange the bacon slices overlapping slightly, around the pan.
  • Step 3
    Spoon the pineapple evenly over the bacon, sprinkle the brown sugar.
  • Step 4
    Combine the baking mix, milk and egg beat vigorously for 30 seconds, batter will be slightly lumpy.
  • Step 5
    Carefully spread the batter over the pineapple.
  • Step 6
    Bake uncovered until golden brown, about 20 to 25 minutes.
  • Step 7
    Run a knife around the edges to loosen, and immediately invert it onto a heatproof serving platter.
  • Step 8
    Serve with maple-flavored syrup.
