When I'm expecting a group for breakfast or brunch, I like to get up early and enjoy a cup of coffee while I get this in the oven before the house gets full. The coffee cake goes together quickly, and then I can relax and work on the rest of the meal while this bakes. Everyone who has tried it loves it, it is nicely sweet without being dessert-like!

Ingredients

  • 1 1/2 cups milk
  • 4 large eggs
  • 1/2 cup all purpose flour
  • 1/4 cup sugar
  • 2 teaspoons pure vanilla extract
  • 2 1/2 cups frozen pitted sweet cherries, thawed and drained
  • 1/4 cup powdered sugar

How To Make sweet cherry coffee cake

  • Step 1
    Preheat oven to 350 degrees. Butter a shallow 2-inch deep 2-quart baking dish.
  • Step 2
    In a large mixing bowl, combine flour and eggs. Slowly stir in milk, sugar, and vanilla extract. Beat with an electric mixer until smooth.
  • Step 3
    Using paper towels, pat the cherries completely dry. Spread the cherries evenly in prepared baking dish. Pour the batter over the cherries.
  • Step 4
    On the center shelf of the oven, bake at 350 degrees for 1 1/2 hours, until top is golden brown and firm to touch.
  • Step 5
    Remove from oven and dust lightly with powdered sugar. Serve warm from pan.
