sweet cherry coffee cake

When I'm expecting a group for breakfast or brunch, I like to get up early and enjoy a cup of coffee while I get this in the oven before the house gets full. The coffee cake goes together quickly, and then I can relax and work on the rest of the meal while this bakes. Everyone who has tried it loves it, it is nicely sweet without being dessert-like!

Ingredients
- 1 1/2 cups milk
- 4 large eggs
- 1/2 cup all purpose flour
- 1/4 cup sugar
- 2 teaspoons pure vanilla extract
- 2 1/2 cups frozen pitted sweet cherries, thawed and drained
- 1/4 cup powdered sugar
How To Make sweet cherry coffee cake

Step 1Preheat oven to 350 degrees. Butter a shallow 2-inch deep 2-quart baking dish.

Step 2In a large mixing bowl, combine flour and eggs. Slowly stir in milk, sugar, and vanilla extract. Beat with an electric mixer until smooth.

Step 3Using paper towels, pat the cherries completely dry. Spread the cherries evenly in prepared baking dish. Pour the batter over the cherries.

Step 4On the center shelf of the oven, bake at 350 degrees for 1 1/2 hours, until top is golden brown and firm to touch.

Step 5Remove from oven and dust lightly with powdered sugar. Serve warm from pan.
