I made these for friends and they absolutely raved about them. Now it is the most requested recipe I have when it comes to serving something for brunch. These are great served with a scone and a mimosa. Regular orange just will do just fine as well!
Blue Ribbon Recipe
This is an easy breakfast recipe to assemble, and it looks impressive. There are a few steps to making these quiches, but if prepped ahead of time, assembly can happen in a snap. The ham crust is slightly sweet and salty compared to the creamy, custardy texture of the filling. A blend of Parmesan cheese, cheddar cheese, and Swiss cheese adds a nutty and tangy flavor. Smoky bacon and savory diced turkey or chicken add savory notes. A drizzle of hollandaise sauce turns these mini quiches into an elegant addition to a brunch.
Ingredients
- 24 slices thinly sliced deli ham
- 5 large eggs
- 1 cup heavy cream
- 1/2 cup milk
- - salt and pepper, to taste
- 1/2 teaspoon garlic powder with parsley
- 1 teaspoon dried tarragon, crushed in palm of hand
- 1 1/2 cups diced turkey or chicken, cooked
- 2 - Roma tomatoes, seeded and diced
- 1/2 cup shredded cheddar cheese, divided
- 1 cup shredded Swiss cheese
- 16 slices bacon, cooked, drained, chopped, divided
- 1-2 teaspoon hot sauce
- 1/2 cup Parmesan cheese
- - prepared hollandaise sauce, prepared according to package directions

Step 1Preheat oven to 350 degrees F. Spray each hole in the cupcake pan lightly with non-stick spray. Form a piece of deli ham into each cup to make a liner for the quiche, making sure to raise the ham a little higher than the cupcake hole so that the mixture stays inside the cup.

Step 2In a large bowl, combine eggs, cream, milk, salt, pepper, garlic, and tarragon. Beat with an electric mixer until smooth and well blended.

Step 3Set aside a little bit of the cheddar cheese and bacon for topping. Add the remaining cheddar cheese, bacon, turkey, tomatoes, Swiss cheese, and hot sauce to the bowl.

Step 4Blend well with a spatula.

Step 5Take a ladle and add egg mixture to each prepared hole in the cupcake pan about 3/4 full.

Step 6Top with Parmesan cheese, the remaining cheddar cheese, and remaining bacon.

Step 7Bake at 350 degrees for 10-15 minutes or until puffy and done in the middle.

Step 8Serve with a dollop of hollandaise sauce.
