Ingredients
- - 2 tbs green onions
- - 3 tbs butter
- - 1/4 lb (1c) cooked fresh or canned crab or diced fresh shrimp or lobster
- - 1/4 tsp salt
- - pinch of pepper
- - 2 tbs maderia or dry white vermouth
- - 3 eggs
- - 1 cup whipping cream
- - 1 tbs tomato paste
- - 1/4 tsp salt
- - pinch pepper
- - 8" partially cooked pie crust
- - 1/4 cup grated swiss cheese
How To Make seafood quiche

Step 1Preheat oven to 375 degrees. Cook green onions in butter for 1 to 2 minutes over moderate heat until tender but not browned. Add shellfish meat and stir gently for 2 minutes. Sprinkle on salt and pepper. Add wine, raise heat, and boil for a moment. Allow to cool slightly.

Step 2Beat the eggs in a mixing bowl with cream tomato paste and seasonings. Gradually blend in shellfish and taste for seasoning.

Step 3Pour mixture into pastry shell and sprinkle cheese over it. Bake in upper third of preheated oven for 25-30 minutes until puffed and browned.
