Ingredients
- CREPES
- 1 1/4 cups flour
- 1/4 teaspoon baking powder
- 1 1/2 cups milk
- 2 eggs
- salt and pepper
- 2 tablespoons butter
- FILLING
- 1 tablespoon butter
- 6 medium mushrooms, chopped
- 2 tablespoons scallions, chopped
- 1 1/2 cups cooked seafood, shrimp, lobster, crab, and/or scallops, chopped
- 4 ounces cream cheese, cut into cubes
- 2 tablespoons half and half
- 2 cups shredded Swiss
- fresh parsley, for garnish
How To Make seafood crepes

Step 1Mix the crepe ingredients together. Brush a skillet or crepe pan with butter then add about 1/4 cup of the batter at a time. Swirl and cook until the top is dry and the bottom is brown. Flip and cook another couple of minutes. Stack on top of each other with wax paper between the crepes.

Step 2To make the filling, add the butter to another pan and cook the mushrooms and scallions until mushrooms have given up their moisture. Add the seafood, cream cheese, and half and half. Cook until smooth and creamy.

Step 3Fill each crepe and fold into a log. Place in a baking dish. Bake at 350 degrees F for about 10 minutes. Add the cheese to the top and bake another 5 minutes until cheese is melted. Serve garnished with parsley.
